Stuffed Peanut Butter Coffee Cake
I was inspired by National Peanut Butter & Jelly Day. Yes, there really is such a thing, it’s April 2. However, I was unhappy with my first try. I was in a hurry and trying to create a dessert, along with several other dishes, for a gathering. I really should listen to myself and not plan more than one new dish at a time, let alone three or more! Rabbit Casserole
It’s been years since I had rabbit. Quite honestly I didn’t remember much about it. My memory of it was neither good nor bad. My family raised a few rabbits for meat for a while during my childhood, but it wasn’t something we had frequently. We started off with a small breeding stock and it takes time (even for rabbits) to build up enough stock to eat. Rice Flake
One of my favorite things to do is visit ethnic grocery stores. Doesn’t matter what flavor, I like them all. I like to walk up and down the aisles looking at all the different foods and wondering what they are used for. They’re also a great place to stock up on basics. Spices are often sold well below grocery store prices and in large quantities.
Cheddar Garlic Biscuits
There they were…lurking in the back of the fridge; a dozen eggs that I had not realized were still there. Since I had more kale and mushrooms I made another frittata. Quick, easy and lunches for the whole week, but this isn’t about frittata. I needed something to go with the frittata, biscuits sounded good.
