Well, it’s a few days into the New Year, how you doing with your resolutions? I’ve decided I need more vegetables in my life. When it comes to improving your health there is one thing that the experts can agree on, eat more vegetables; although, they seem more than willing to argue about which vegetable you should eat. For motivation I’ve decided to post a salad or dressing recipe every Thursday this year.
Growing up salads consisted of iceberg lettuce topped by ranch, blue cheese, or Italian dressing but there is a whole world of ingredient combinations that can be salad. This recipe is an example, if I hadn’t had Thai food I wouldn’t have thought of using peanut butter as a salad dressing.
Peanut Butter Dressing
¼ cup peanut butter
3 Tbsp. Olive oil
1 ½ Tbsp. minced garlic
2 Tbsp. lemon juice
¼ tsp. salt
¼ tsp. sugar, optional*
Dash ground pepper
Combine and whisk all ingredients in a small bowl. A fork may be easier to use than an actual whisk. The dressing may need to be heated in the microwave for a few minutes or set out to room temperature before use after being stored in the refrigerator.
*Whether you add sugar or not will depend on the type of peanut butter you use. If you’re using peanut butter made with sugar, you probably won’t need the sugar. Enjoy!
